I know, it’s not Friday when we usually do our post with great food recipes we’ve seen from our investigations and travels the week before - but I’ve just had the best Chicken Sandwich I’ve ever eaten.   We like food almost as much as we like fishing, and we also love to grill and BBQ - we grill and Q year round at my place and almost every day during the summer and fall.  

We know the guys who run the White Wine 101 site, and we were talking with them today about a variety of things.  They do a food recipe post in their blog every Friday and suggest a good wine, usually a good value wine, to go with it.  They’re doing a review right now of Sauvignon Blanc wines on their blog. 

They said their most popular recipe of the summer had been one they posted back in early June for Beer Can Chicken Salad Sandwiches with Creamy Blue Cheese.  We tried the reicpe this evening, and got their permission to post this recipe - man would this be great on the river….

Here’s the recipe-

2 cups chopped cooked chicken, we used a beer can chicken done on the smoker (can be done in the oven, on the grill, or in the smoker - or you could use a roasted chicken from the store)

2/3 cup chopped celery

1/3 cup sliced green onion (white and green parts)

1/3 cup light mayo or miracle whip

1/3 cup toasted pecans, chopped small

1/3 cup grapes, chopped

2 teaspoons fresh lemon juice

Kosher salt and fresh ground pepper to taste

6 nice Kaiser type rolls, we like with either toasted sesame seed or onions

6 ounces creamy blue cheese, divided and spread among the rolls

This one is easy - combine all the chicken salad ingredients in a large bowl and gently mix.  Spoon the chicken salad mixture into the prepared buns.  These are great sandwiches to chill, wrap in foil, and take in the cooler on a picnic.

The White Wine 101 guys had suggested you serve this great sandwich with a Hogue Cellars Fume Blanc 2005 from the Columbia Valley (we  bought a bottle in Bozeman for $7.19, what a bargain for a very tasty summer wine!).

Dang this was good….
